
As the 2013 football season culminates in today's Super Bowl, we want to celebrate the traditional food of the game's host city -- New Orleans. Here is a recipe round-up of signature cajun and creole dishes. The catch is all these recipes are vegetarian and vegan!

- The vegan dish has a shorter prep time than other recipes and uses beans, giving the plate a rich color. If you're not a fan of okra, replace it with eggplant or green beans.
Roasted Winter Vegetable Jambalaya
- This may not be your traditional New Orleans jambalaya recipe, but gardeners will appreciate being able to use up some staples from the root cellar -- parsnips, carrots, sweet potatoes and whatever other root veggies you have laying around.
