As the 2013 football season culminates in today's Super Bowl, we want to celebrate the traditional food of the game's host city -- New Orleans. Here is a recipe round-up of signature cajun and creole dishes. The catch is all these recipes are vegetarian and vegan!

Easy Red Beans and Rice

  • Sarah Voisins recommends using sugar-free canned red beans. Purée them in a food processor to help speed up the cooking process.

Cajun-Spiced Tempeh Po' Boys

  • Tempeh is a soy-based patty. Its meaty texture means chances are you won't miss the traditional roast beef or fried shrimp in this sandwich.

Okra Gumbo with Chickpeas and Kidney Beans

  • The vegan dish has a shorter prep time than other recipes and uses beans, giving the plate a rich color. If you're not a fan of okra, replace it with eggplant or green beans.

Roasted Winter Vegetable Jambalaya

  • This may not be your traditional New Orleans jambalaya recipe, but gardeners will appreciate being able to use up some staples from the root cellar -- parsnips, carrots, sweet potatoes and whatever other root veggies you have laying around.

Vegan Beignets

  • Beignets are deep-fried French pastries. This recipe substitutes the milk and eggs used in traditional recipes with Egg Replacer and coconut milk.
