
I used to eat this dish at my favorite health food store in New York City when I was a gym bunny back in the 1990s. I enjoyed it with grilled chicken or as a stand-alone snack. The nuttiness of the short grain brown rice is enhanced by some tahini and sesame oil.
After this recipe, use the tahini to make homemade mayonnaise. (Use half tahini and half oil.) Or, jazz up some store-bought mayo with tahini and lemon juice. It's a great dip for veggies or a spread for a sandwich.
Ingredients
- 4 cups cooked short-grain brown rice
- 2 tablespoons tahini paste
- 2 tablespoons water
- 2 tablespoons lemon juice
- 1/2 teaspoon lemon zest
- 1 teaspoon toasted sesame oil
- salt and pepper to taste
- black and white sesame seeds
- chopped herbs
Instructions
- In a medium mixing bowl, combine tahini, water, lemon juice and sesame oil. Whisk until smooth.
- Add brown rice (warm or chilled, either is fine). Toss to combine and season to taste. Add sesame seeds and chopped herbs if you like.
