
Foil-Steamed Catfish
Ingredients
- 2 catfish fillets
- 1/3 cup olive oil
- 1 teaspoon sesame oil
- 4 slices jalapeños
- 1 teaspoon ginger
- 1 teaspoon garlic
- 1 cup carrots, julienne
- 1 cup leeks, julienne
- garlic chives
- 10-12 shiitake mushroom caps
- Juice of 1/2 lime
- salt and pepper
- 1 tablespoon water
Instructions
- Preheat oven to 500 degrees F.
- Place fish in the middle of the 1 foot long sheet of aluminum foil. Top fish with olive and sesame oil. Add ginger, garlic, peppers vegetables. Arrange mushrooms around the fish. Season with fresh lime juice and salt and pepper. Add water to help it steam. Fold foil into fish-shaped packages for some extra fun.
- Cook 8-10 minutes. When the packages puff up with steam, the fish is cooked.
