Beets. Golden Beets. Pickled.

People always complain to me that they don't like beets because they taste like dirt. I think the golden beets are a little less that way. I especially love them pickled.

First things first, be sure to steam or boil the beets for at least 45 minutes. Use a sharp knife to test if they're cooked through. If you feel any resistance as the knife pierces the beets, keep cooking. You want the blade to move easily in and out of the veggies.

Well all's said and down, here's a storage tip. My grandma taught me to seal the lid nice and tight and then turn the jar on its top. This helps it seal as it cools. Once you put it in the fridge (right-side-up), the flavors will have permeated every single bit of these beets.

We layer a sheet tray with a bunch of kosher salt. Rest the beets on top of the salt bed so they don't burn on the bottom. As they roast, they will dehydrate a bit and develop a very intense sweet flavor.

Gingery Pickled Golden Beets

Ingredients

  • 4 large golden beet roots
  • 1 1/2 tablespoons sugar
  • 1 teaspoon ginger, minced
  • 1/2 cup vinegar
  • 1/4 cup water
  • 1 cinnamon stick
  • 1/2 hot pepper (you choose)

Instructions

  1. Boil the beets in a large pan of water until tender. Depending on how large the beets are, this could take 45 minutes to an hour.
  2. Cool the beets, then peel off the skins. Slice them into wedges. Stuff them into a mason jar.
  3. Heat the sugar, ginger, vinegar and water until just boiling. Add the cinnamon stick and hot pepper.
  4. Pour the brine over the sliced beets and allow to sit until cooled. Screw the lid onto the jar.
  5. These will stay good in the refrigerator for three weeks. The longer you wait to pop them open, the more pickled they'll taste!
