Sweet 'N Spicy Chicken Wings

These wings are great for the big game, Oscar night or any other time you don't want to fire up the grill or drag out the fry daddy.

These are much healthier than your typical wings because you add no fat. You can change them up by adding toasted cumin, curry powder or any of your favorite spices.

You can also do this recipe with chicken drumsticks for a more meaty main course. You can even add soy, Thai fish sauce and sesame oil for an Asian flare.

They are so tasty on their own they really don't need any dipping sauce.

Sweet ‘N Spicy Chicken Wings

Ingredients

  • 24 party wings (chicken wings with tips removed and cut at the joint)
  • 1 teaspoon chili flakes
  • 2 teaspoons garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon cayenne pepper
  • ¼ cup maple syrup
  • ½ cup water (or as needed)
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine the wings, garlic powder, salt and cayenne. Toss to evenly coat.
  2. Heat pan over medium/high heat and place wings fatty side down. Add maple syrup and water. Cover.
  3. Cook/steam, over medium/heat until tender, when poked with a pairing knife (approximately 10-15 minutes). Add more water as necessary.
  4. Remove lid and continue cooking until the remaining liquid evaporates. A nice sticky glaze will develop. Wings should be lightly browned on the first side. Turn each wing over and brown the second side. If the pan starts to over caramelize (burn), add more water, syrup and/or reduce the heat.
  5. Season to taste with additional salt and pepper. Add any additional ingredients and toss to combine. I suggest lemon or lime juice, fresh jalapeños, chopped cilantro, scallions or sesame seeds.
