Spring, It’s almost All The Way Here
Now that the weather is warming, I’m ready to stop making hearty root veggie roasts and heavy soups.
But until the farmers market starts offering more spring produce, my table is going to have to keep supporting potato and onion dishes.
The following is a super simple (and summery!) potato salad recipe you can whip up with just four ingredients. (If your local coop doesn’t sell veganaise for some reason, here’s how to make your own.)
I guarantee this one will make you a potluck rock star.
Spicy Vegan Potato Salad
- 1 1/2 pounds red potatoes
- 1/4 cup green onions, chopped
- 1/4 cup veganaise
- 1/4 cup Dijon mustard
- Boil potatoes until fork-tender.
- After they cool, add green onions, veganaise and Dijon mustard.
- Enjoy the new season!
