This is my take on baba ghanoush, but I like to give it a fancy name -- caviar!
Look toward the bottom of the ingredients list and you'll see anchovies. Don't turn back! These little fish add a certain something to this dish that elevates it to a new level of delicious. Add as many (or as few) anchovies as you like. Your palate should rule the recipe!
Make it a completely homemade appetizer by toasting your own pita chips to serve alongside. They are especially tasty if you toast them immediately before serving.
